  • 1 1/2 cups elbow macaroni
  • 1 cup frozen peas (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  • Cook the Beef:
    • Heat olive oil in a large pot over medium heat. Add the ground beef and cook, breaking it into smaller pieces, until browned and fully cooked. Drain any excess fat.
  • Sauté Vegetables:
    • Add the onion, garlic, carrots, and celery to the pot. Cook for 4-5 minutes, stirring occasionally, until the vegetables begin to soften.
  • Simmer the Soup:
    • Stir in the diced tomatoes, beef broth, Italian seasoning, smoked paprika, salt, and pepper. Bring the mixture to a boil, then reduce the heat to low and simmer for 15 minutes.
  • Cook the Pasta:
    • Add the macaroni to the pot and cook for an additional 8-10 minutes, or until the pasta is tender. If using frozen peas, stir them in during the last 2 minutes of cooking.
  • Serve:
