Ingredients
Scale
For the Casserole:
- 2 cups cooked chicken, shredded or cubed (rotisserie chicken works well)
- 1 cup long-grain white rice (uncooked)
- 1 can (10.5 oz) cream of chicken soup
- 1 cup chicken broth
- 1/2 cup sour cream
- 1/2 cup shredded cheddar cheese (optional for topping)
- 1 small onion, diced
- 1 cup frozen peas and carrots (or any mixed veggies you prefer)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
For the Topping (optional):
- 1/2 cup crushed crackers (e.g., Ritz crackers or cornflakes)
- 2 tablespoons melted butter
Instructions
- Prepare the Oven and Baking Dish:
- Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray or butter.
- Make the Casserole Mixture:
- In a large mixing bowl, combine the cooked chicken, uncooked rice, cream of chicken soup, chicken broth, sour cream, diced onion, and frozen peas and carrots.
- Add the garlic powder, onion powder, paprika, salt, and pepper, and mix until everything is well combined.
- Transfer to Baking Dish:
- Pour the mixture into the prepared baking dish and spread it evenly. If desired, sprinkle shredded cheddar cheese over the top for a cheesy finish.
- Cover and Bake:
- Cover the casserole with aluminum foil and bake in the preheated oven for 45–50 minutes, or until the rice is cooked and the liquid is absorbed.
- Prepare the Topping (Optional):
- While the casserole is baking, mix the crushed crackers with melted butter. Once the casserole is done baking, remove the foil and sprinkle the buttered cracker mixture over the top.
- Bake Again:
- Return the casserole to the oven (uncovered) for an additional 10–15 minutes, or until the top is golden and crispy.
- Serve and Enjoy:
- Let the casserole sit for a few minutes before serving. Garnish with fresh herbs like parsley or thyme if desired.
Notes
- You can substitute brown rice for white rice, but keep in mind that it will require a longer cooking time and more liquid.
- Feel free to add other vegetables such as mushrooms, bell peppers, or spinach to make the casserole even more nutritious.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 3 months.
