  • 1 cup chicken broth

  • 1/2 cup shredded cheddar cheese (optional for topping)
  • 1 small onion, diced
  • 1 cup frozen peas and carrots (or any mixed veggies you prefer)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste

For the Topping (optional):

  • 1/2 cup crushed crackers (e.g., Ritz crackers or cornflakes)
  • 2 tablespoons melted butter

Instructions

  • Prepare the Oven and Baking Dish:
    • Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray or butter.
  • Make the Casserole Mixture:
    • In a large mixing bowl, combine the cooked chicken, uncooked rice, cream of chicken soup, chicken broth, sour cream, diced onion, and frozen peas and carrots.
    • Add the garlic powder, onion powder, paprika, salt, and pepper, and mix until everything is well combined.
  • Transfer to Baking Dish:
    • Pour the mixture into the prepared baking dish and spread it evenly. If desired, sprinkle shredded cheddar cheese over the top for a cheesy finish.
  • Cover and Bake:
    • Cover the casserole with aluminum foil and bake in the preheated oven for 45–50 minutes, or until the rice is cooked and the liquid is absorbed.
  • Prepare the Topping (Optional):
    • While the casserole is baking, mix the crushed crackers with melted butter. Once the casserole is done baking, remove the foil and sprinkle the buttered cracker mixture over the top.
  • Bake Again:
    • Return the casserole to the oven (uncovered) for an additional 10–15 minutes, or until the top is golden and crispy.
  • Serve and Enjoy:
    • Let the casserole sit for a few minutes before serving. Garnish with fresh herbs like parsley or thyme if desired.

Notes

  • You can substitute brown rice for white rice, but keep in mind that it will require a longer cooking time and more liquid.
