Ingredients

  • 1 lb fresh salmon fillets
  • 2 chipotle peppers in adobo sauce, minced
  • 2 tbsp honey
  • 8 soft corn tortillas
  • 1 cup fresh pineapple, diced
  • 1/4 cup cilantro, chopped
  • Juice of 1 lime
  • 1/4 cup red onion, finely sliced
  • 1 avocado (optional), sliced

Instructions

  1. In a bowl, mix honey and minced chipotle peppers to create the marinade.
  2. Coat the salmon fillets with the honey-chipotle mixture and let marinate for at least 30 minutes at room temperature.
  3. Preheat the grill or stovetop pan to medium-high heat. Cook the salmon skin-side down for 4-5 minutes or until it flakes easily with a fork.
  4. While the salmon cooks, prepare the pineapple salsa by mixing diced pineapple, cilantro, red onion, and lime juice in a bowl.
  5. Warm taco shells in a dry skillet until pliable. Flake cooked salmon into each shell and top generously with pineapple salsa.
  6. Finish with a squeeze of lime juice before serving.
