- 1 lb fresh salmon fillets
- 2 chipotle peppers in adobo sauce, minced
- 2 tbsp honey
- 8 soft corn tortillas
- 1 cup fresh pineapple, diced
- 1/4 cup cilantro, chopped
- Juice of 1 lime
- 1/4 cup red onion, finely sliced
- 1 avocado (optional), sliced
Instructions
- In a bowl, mix honey and minced chipotle peppers to create the marinade.
- Coat the salmon fillets with the honey-chipotle mixture and let marinate for at least 30 minutes at room temperature.
- Preheat the grill or stovetop pan to medium-high heat. Cook the salmon skin-side down for 4-5 minutes or until it flakes easily with a fork.
- While the salmon cooks, prepare the pineapple salsa by mixing diced pineapple, cilantro, red onion, and lime juice in a bowl.
- Warm taco shells in a dry skillet until pliable. Flake cooked salmon into each shell and top generously with pineapple salsa.
- Finish with a squeeze of lime juice before serving.
