  • 2 pounds fresh littleneck or cherrystone clams
  • 4 slices thick-cut bacon
  • 1 medium onion, diced
  • 2 stalks celery, chopped
  • 2 cloves garlic, minced
  • 2 cups Yukon Gold potatoes, diced
  • 1 cup heavy cream
  • 4 cups chicken broth (low-sodium)
  • 1 teaspoon dried thyme

Instructions

  1. Rinse clams under cold water and steam in a pot with one inch of water until they open (about five minutes). Discard any unopened clams.
  2. In another pot, cook bacon over medium heat until crispy. Remove bacon and leave fat in the pot.
  3. Sauté onion and celery in bacon fat until softened (about five minutes), then add garlic for one more minute.
  4. Stir in potatoes, chicken broth, and thyme. Bring to boil; reduce heat and simmer until potatoes are tender (about fifteen minutes).
  5. Add steamed clams (discard shells) and heavy cream; stir until heated through—do not boil.
  6. Serve hot, garnished with reserved crispy bacon.
