Ingredients

Scale

For the Cake:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream or Greek yogurt

For the Cinnamon Swirl:

  • 1/2 cup brown sugar, packed
  • 2 teaspoons ground cinnamon

For the Streusel Topping:

  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, melted

Instructions

  • Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease a 9×9-inch square baking pan or line it with parchment paper.
  • Prepare the Streusel Topping:
    • In a small bowl, combine the flour, brown sugar, granulated sugar, and cinnamon. Stir in the melted butter and mix until crumbly. Set aside.
  • Prepare the Cinnamon Swirl:
    • In a separate small bowl, mix the brown sugar and cinnamon together. Set aside.
  • Mix the Cake Batter:
    • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
    • In a large bowl, cream the butter and granulated sugar until light and fluffy, about 2-3 minutes.
    • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
    • Add the dry ingredients to the wet mixture alternately with the sour cream, beginning and ending with the dry ingredients. Mix until just combined.
  • Assemble the Cake:
    • Spread half of the batter into the prepared pan. Sprinkle the cinnamon swirl mixture evenly over the batter.
    • Spread the remaining batter on top and smooth it out with a spatula. Sprinkle the streusel topping evenly over the top.
  • Bake the Cake:
    • Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool and Serve:
    • Allow the cake to cool in the pan for about 10 minutes before slicing and serving.

Notes

  • For a lighter texture, you can substitute the sour cream with Greek yogurt.
  • Add chopped nuts (like walnuts or pecans) to the streusel topping for an added crunch.
