Ingredients

  • 1 cup tri-color quinoa
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 red bell pepper, diced
  • ½ cup fresh cilantro, chopped
  • Juice of 2 limes
  • 3 tbsp extra virgin olive oil
  • 1 tsp ground cumin
  • Salt & pepper to taste

Instructions

  1. Rinse quinoa under cold water and combine it with 2 cups of water in a saucepan. Bring to a boil, cover, reduce heat to low, and simmer for 15 minutes until fluffy.
  2. While quinoa cooks, chop cherry tomatoes and bell pepper; set aside.
  3. In a small bowl, whisk together lime juice, olive oil, cumin, salt, and pepper.
  4. Once quinoa cools slightly, mix it with the prepared vegetables and black beans in a large bowl.
  5. Drizzle the dressing over the salad and toss gently to combine.
