  • 1/2 cup plain breadcrumbs
  • 2 large eggs
  • 1/4 cup fresh parsley, minced
  • 2 medium carrots, thinly sliced
  • 2 medium waxy potatoes, diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups beef broth
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. In a mixing bowl, combine ground beef, breadcrumbs, eggs, parsley, salt, and pepper. Mix gently until just combined.
  2. Shape small meatballs (about 1 inch in diameter) and place them on a lined baking sheet.
  3. Heat olive oil in a skillet over medium-high heat. Sear the meatballs until browned on all sides, around 5 minutes; remove from skillet.
  4. In the same skillet, sauté the carrots and potatoes for about 5 minutes until slightly softened.
  5. Add diced tomatoes and beef broth; bring to a gentle boil while scraping up any brown bits from the pan.
  6. Return meatballs to the pot along with basil and oregano; cover and simmer for about 30 minutes until everything is tender.
