Description

Cottage Cheese Egg Bites are fluffy, protein-packed delights perfect for breakfast or snacks. These savory bites are easy to make and customizable to suit your taste!


Ingredients

  • 1 cup low-fat cottage cheese
  • 4 large eggs
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup diced bell peppers (mixed colors)
  • 1 cup fresh spinach, chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease a muffin tin with nonstick spray or oil.
  3. In a bowl, mix the cottage cheese, eggs, shredded cheese, bell peppers, spinach, salt, and pepper until combined.
  4. Pour the mixture into the muffin tin cups until about 3/4 full.
  5. Bake for 20-25 minutes or until golden brown and puffed up.
  6. Allow to cool slightly before removing from the tin.
