- 1 cup low-fat cottage cheese
- 4 large eggs
- 1 cup shredded cheese (cheddar or mozzarella)
- 1/2 cup diced bell peppers (mixed colors)
- 1 cup fresh spinach, chopped
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 350°F (175°C).
- Grease a muffin tin with nonstick spray or oil.
- In a bowl, mix the cottage cheese, eggs, shredded cheese, bell peppers, spinach, salt, and pepper until combined.
- Pour the mixture into the muffin tin cups until about 3/4 full.
- Bake for 20-25 minutes or until golden brown and puffed up.
- Allow to cool slightly before removing from the tin.
