- 1 lb boneless skinless chicken breasts (3–4 pieces)
- 8 oz penne pasta
- 1 cup fresh asparagus, chopped
- 8 oz button or cremini mushrooms, sliced
- 1 cup heavy cream
- ½ cup freshly grated Parmesan cheese
- 2 cloves garlic, minced
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
- 1 tsp dried oregano or thyme
Instructions
- Cook the penne pasta in salted boiling water until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add diced chicken and season with salt and pepper. Sauté until golden brown, about 5-7 minutes.
- Stir in minced garlic and sliced mushrooms; cook until softened, about 4-5 minutes.
- Add chopped asparagus and sauté for an additional 3-4 minutes until bright green.
- Pour in heavy cream and stir in grated Parmesan cheese until melted and smooth.
- Toss cooked penne into the skillet, coating it evenly with the creamy sauce. Serve hot.
