Description

This Creamy Spinach and Mushroom Gnocchi is a rich, comforting dish that combines soft, pillowy gnocchi with a creamy sauce, earthy mushrooms, and vibrant spinach. It’s an easy, indulgent meal that’s perfect for weeknights or special occasions. The blend of garlic, cream, and Parmesan creates a luscious sauce that coats the gnocchi beautifully, making this dish a satisfying and flavorful choice.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 cup sliced mushrooms (button, cremini, or your choice)
  • 2 cloves garlic, minced
  • 2 cups fresh spinach, roughly chopped
  • 1 (16 oz) package gnocchi (store-bought or homemade)
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • 1/4 teaspoon dried thyme (optional)
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Cook the Gnocchi:
    • Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions, about 2-3 minutes, until they float to the top. Drain the gnocchi, reserving 1/4 cup of pasta water, and set aside.
  2. Sauté the Mushrooms and Garlic:
    • While the gnocchi cooks, heat the olive oil in a large skillet over medium heat. Add the sliced mushrooms and cook for 5-6 minutes, or until they are browned and tender. Add the minced garlic and cook for another 1 minute, until fragrant.
  3. Add the Spinach and Cream:
    • Stir in the chopped spinach and cook for 2-3 minutes, or until wilted. Add the heavy cream and bring the mixture to a simmer. Let it cook for 2-3 minutes, or until the sauce thickens slightly.
  4. Combine the Gnocchi and Sauce:
    • Add the cooked gnocchi to the skillet, tossing gently to coat in the creamy mushroom sauce. If the sauce seems too thick, add a splash of the reserved pasta water to loosen it. Stir in the grated Parmesan cheese and season with salt, pepper, and thyme (if using).
  5. Serve:
    • Once everything is well coated and heated through, serve the gnocchi in bowls. Garnish with fresh parsley and extra Parmesan cheese, if desired.

Notes

  • Make it Vegan: Use a plant-based cream and vegan Parmesan for a dairy-free version.
  • Add Protein: For extra protein, try adding cooked chicken, sausage, or even crispy pancetta.
  • Storage: Leftovers can be stored in an airtight container in the fridge for up to 2 days. Reheat on the stovetop with a little extra cream or broth if needed.
