Ingredients
Scale
- 2 cups cooked chicken breast, shredded or diced
- 1 ripe avocado, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, finely diced
- 1/4 cup cucumber, diced
- 1 tablespoon fresh cilantro, chopped (optional)
- 1 tablespoon olive oil
- 1 tablespoon lime juice
- 1 teaspoon Dijon mustard
- Salt and pepper, to taste
- 1/4 teaspoon garlic powder (optional)
- Mixed greens or lettuce, for serving (optional)
Instructions
- Prepare the Salad Ingredients:
- In a large bowl, combine the shredded chicken, diced avocado, halved cherry tomatoes, diced red onion, and cucumber. If using cilantro, add it to the bowl as well.
- Make the Dressing:
- In a small bowl, whisk together the olive oil, lime juice, Dijon mustard, garlic powder (if using), and a pinch of salt and pepper. Taste and adjust the seasoning as needed.
- Toss the Salad:
- Pour the dressing over the chicken and vegetable mixture. Toss gently to coat everything in the dressing, being careful not to mash the avocado.
- Serve:
- Serve the salad on a bed of mixed greens or lettuce for extra crunch, or enjoy it as is for a lighter version. Garnish with extra cilantro if desired.
Notes
- Make it Dairy-Free: This salad is naturally dairy-free, but if you’d like to add some creaminess, a dollop of dairy-free sour cream or Greek yogurt can be used.
- Add Crunch: For an added crunch, consider topping the salad with roasted nuts, seeds, or crumbled tortilla chips.
- Storage: Leftovers can be stored in an airtight container in the fridge for up to 1 day. The avocado may brown slightly, but the salad will still be delicious.
