Instructions

  • Prepare the Salad Ingredients:
    • In a large bowl, combine the shredded chicken, diced avocado, halved cherry tomatoes, diced red onion, and cucumber. If using cilantro, add it to the bowl as well.
  • Make the Dressing:
    • In a small bowl, whisk together the olive oil, lime juice, Dijon mustard, garlic powder (if using), and a pinch of salt and pepper. Taste and adjust the seasoning as needed.
  • Toss the Salad:
    • Pour the dressing over the chicken and vegetable mixture. Toss gently to coat everything in the dressing, being careful not to mash the avocado.
