  • 23 pounds chuck roast
  • 4 dried guajillo chiles
  • 1 medium onion
  • 4 garlic cloves
  • 2 cups low-sodium beef broth
  • Corn tortillas
  • Fresh cilantro and diced onions for topping

Instructions

  1. Soak guajillo chiles in hot water for 15 minutes until softened. Remove stems and seeds, then blend into a smooth paste.
  2. Sear the chuck roast on all sides in a large pot over medium heat until browned (about 4-5 minutes per side).
  3. Blend soaked chiles with onion, garlic, beef broth, and seasonings until smooth.
  4. Pour the blended sauce over the seared meat, bring to a boil, then reduce heat and simmer covered for about three hours until fork-tender.
