- 6 large eggs
- 1/2 cup milk
- 1/2 teaspoon salt

- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/4 cup diced onion (optional)
- 1/2 cup diced bell pepper (optional)
- 1/4 cup chopped fresh cilantro (for garnish)
- Salsa, sour cream, or avocado (for serving)
Instructions
- Cook the eggs:
- In a bowl, whisk together the eggs, milk, salt, and pepper.
- Heat the olive oil or butter in a skillet over medium heat. Pour in the egg mixture and scramble until just set, stirring occasionally. Remove from heat and set aside.
- Prepare the tortilla stack:
- Preheat your oven to 375°F (190°C).
- Lightly grease a 9×9-inch or 8×8-inch baking dish.
- Place one tortilla in the bottom of the dish and top with a layer of scrambled eggs, followed by a layer of cooked sausage (or bacon), and a sprinkle of shredded cheddar and Monterey Jack cheese.
- Repeat this layering process with the remaining tortillas, eggs, sausage, and cheese. Finish with a final layer of cheese on top.
- Bake the stack:
- Cover the baking dish with foil and bake for 15-20 minutes, until the cheese is melted and the layers are heated through. Remove the foil and bake for another 5 minutes to brown the cheese slightly on top.
- Serve:
