Instructions

  • Preheat the oven:
    • Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  • Prepare the chicken mixture:
    • In a large bowl, mix the shredded chicken with the red enchilada sauce, diced green chilies, cumin, and chili powder. Stir until the chicken is evenly coated with the sauce and seasonings.
  • Assemble the casserole:
    • Spread a thin layer of the chicken mixture on the bottom of the baking dish.
    • Layer half of the tortillas over the chicken mixture, overlapping slightly.
    • Add half of the remaining chicken mixture on top of the tortillas and sprinkle with 1 cup of shredded cheese.
