Ingredients
Scale
- 3 cups cooked, shredded chicken (rotisserie chicken works well)
- 1 can (10 oz) red enchilada sauce (or homemade)
- 1 can (4 oz) diced green chilies
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 8 small corn tortillas, cut into halves or quarters
- 2 cups shredded Mexican cheese blend (or cheddar and Monterey Jack)
- 1/4 cup chopped fresh cilantro (optional, for garnish)
- 1/2 cup sour cream (optional, for serving)
- 1/2 cup sliced jalapeños (optional, for serving)
Instructions
- Preheat the oven:
- Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Prepare the chicken mixture:
- In a large bowl, mix the shredded chicken with the red enchilada sauce, diced green chilies, cumin, and chili powder. Stir until the chicken is evenly coated with the sauce and seasonings.
- Assemble the casserole:
- Spread a thin layer of the chicken mixture on the bottom of the baking dish.
- Layer half of the tortillas over the chicken mixture, overlapping slightly.
- Add half of the remaining chicken mixture on top of the tortillas and sprinkle with 1 cup of shredded cheese.
- Repeat the layers: tortillas, chicken mixture, and cheese.
- Bake:
- Cover the casserole with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and slightly golden.
- Serve:
- Let the casserole rest for 5 minutes before slicing. Garnish with chopped cilantro, sour cream, and jalapeños, if desired. Serve hot.
Notes
- You can use flour tortillas instead of corn for a softer texture.
- For added vegetables, you can layer sautéed bell peppers, onions, or corn into the casserole.
- For a spicier dish, add diced jalapeños to the chicken mixture or use a spicier enchilada sauce.
