Instructions

  • Prepare the batter:
    In a large mixing bowl, sift together the flour, cocoa powder, sugar, and salt. In a separate bowl, whisk the eggs, milk, and vanilla extract. Gradually add the wet ingredients to the dry ingredients, whisking until smooth. Stir in the melted butter. Let the batter rest for 20-30 minutes to allow the flour to hydrate and bubbles to settle.
  • Cook the crepes:
