- Corn tortillas
- 1 cup shredded cheddar and Monterey Jack cheese
- 2 cups enchilada sauce (store-bought or homemade)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Fresh cilantro (optional)
Instructions
- In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
- Add diced onion and minced garlic; sauté until translucent.
- Stir in cumin and chili powder; simmer for about 5 minutes.
- Preheat oven to 350°F (175°C). Fill tortillas with the beef mixture and sprinkle with cheese; roll tightly.
- Spread some enchilada sauce in a baking dish and place rolled tortillas seam-side down. Pour remaining sauce on top and add extra cheese.
- Bake for 20-25 minutes until the cheese is bubbly and golden.
