  • Corn tortillas
  • 1 cup shredded cheddar and Monterey Jack cheese
  • 2 cups enchilada sauce (store-bought or homemade)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Fresh cilantro (optional)

Instructions

  1. In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
  2. Add diced onion and minced garlic; sauté until translucent.
  3. Stir in cumin and chili powder; simmer for about 5 minutes.
  4. Preheat oven to 350°F (175°C). Fill tortillas with the beef mixture and sprinkle with cheese; roll tightly.
  5. Spread some enchilada sauce in a baking dish and place rolled tortillas seam-side down. Pour remaining sauce on top and add extra cheese.
  6. Bake for 20-25 minutes until the cheese is bubbly and golden.
