- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 1 can (10.5 oz) cream of chicken soup
- 1 can (10 oz) diced tomatoes with green chiles
- 2 cups shredded sharp cheddar cheese
- 2 cups crushed tortilla chips
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper (any color), chopped
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C) and prepare a large baking dish.
- In a skillet over medium heat, sauté the chopped onion and bell pepper until soft (about 5 minutes).
- Season chicken breasts with salt and pepper; add to skillet. Cook until no longer pink (8-10 minutes). Remove from heat.
- Stir in cream of chicken soup, diced tomatoes with green chiles, minced garlic, cumin, and chili powder. Heat for another 2 minutes.
- Layer crushed tortilla chips in the baking dish, followed by half the chicken mixture and half the cheddar cheese. Repeat layers.
- Cover with foil and bake for 25 minutes; remove foil and bake an additional 10-15 minutes until cheese is bubbly and golden brown.
