  • 1 cup Arborio rice
  • 1 lb fresh lobster meat, cooked and chopped
  • 4 cups lobster stock (or chicken broth)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup dry white wine
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large saucepan over medium heat. Add onion and sauté until translucent.
  2. Stir in garlic and cook for an additional minute until fragrant.
  3. Add Arborio rice, stirring frequently to coat each grain in oil.
  4. Pour in white wine; simmer until almost fully absorbed.
  5. Gradually add warm lobster stock, one ladle at a time, stirring constantly until absorbed before adding more. Continue until rice is al dente (about 18 minutes).
  6. Fold in chopped lobster and Parmesan cheese; season with salt and pepper to taste.
  7. Remove from heat and let sit for a few minutes before serving.
