  • 6 large eggs

  • 1/4 teaspoon cumin

Instructions

  • Cook the tortilla strips:
    • Heat the olive oil in a large skillet over medium heat. Add the tortilla strips and cook until crispy, about 3-4 minutes. Remove from the skillet and set aside.
  • Sauté the vegetables:
    • In the same skillet, add the diced onion and bell pepper (if using). Cook for 2-3 minutes, until softened and slightly browned.
