Ingredients

Scale
  • 34 boneless, skinless chicken breasts
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can green chiles
  • 4 cups low-sodium chicken broth
  • 8 oz cream cheese
  • Olive oil for sautéing
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by dicing the onion and mincing the garlic. Cut the chicken into bite-sized pieces.
  2. In a large pot over medium heat, add olive oil and sauté the diced onion until translucent (about 5 minutes). Add minced garlic and cook for another minute until fragrant.
  3. Add chicken pieces to the pot; season with salt and pepper. Cook until browned on all sides (approximately 6-8 minutes).
  4. Pour in the chicken broth and mix in green chiles; stir well and bring to a simmer.
  5. After about ten minutes of simmering, reduce heat and stir in cream cheese until melted completely into the broth.
  6. Taste and adjust seasoning as needed with cumin or additional salt & pepper. Serve hot, garnished with fresh cilantro or diced jalapeños.
