Description

Indulge in the festive delight of Eggnog Pancakes, a fluffy breakfast treat infused with rich eggnog flavor. Perfect for holiday mornings, these pancakes will warm your heart and home.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cinnamon (optional)
  • 1 cup eggnog
  • 1/2 cup milk
  • 2 large eggs
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract

Instructions

  1. In a large bowl, whisk together flour, sugar, baking powder, nutmeg, and cinnamon until well combined.
  2. In another bowl, mix eggnog, milk, eggs, melted butter, and vanilla extract until smooth.
  3. Gradually pour the wet mixture into the dry ingredients and stir gently until just combined; lumps are fine.
  4. Preheat a non-stick skillet over medium heat and grease lightly with butter or oil.
  5. Pour about 1/4 cup of batter per pancake onto the skillet. Cook until bubbles form on top (about 2-3 minutes), then flip and cook until golden brown on the other side (another 2-3 minutes).
  6. Serve warm with whipped cream, maple syrup, or your favorite toppings.
