  • 2 medium eggplants, sliced
  • 2 large Russet potatoes, sliced
  • 2 tbsp taco seasoning
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup grated sharp cheddar cheese
  • 4 tbsp unsalted butter
  • ¼ cup all-purpose flour
  • 2 cups milk

Instructions

  1. Preheat oven to 375°F (190°C). Thinly slice eggplant and potatoes.
  2. In a skillet over medium heat, sauté onion and garlic until fragrant. Add ground beef and taco seasoning; cook until browned (5-7 minutes).
  3. In a baking dish, layer potatoes, then eggplant; top with half the meat mixture. Repeat layers.
  4. For béchamel sauce, melt butter in a saucepan over low heat. Whisk in flour until golden brown. Gradually add milk while whisking until thickened (about 10 minutes).
  5. Pour béchamel over layered ingredients and sprinkle with cheese.
  6. Bake uncovered for 30-35 minutes or until bubbly and golden brown. Let rest for 10 minutes before serving.
