Ingredients

  • 34 boneless, skinless chicken breasts
  • 8 oz fresh cremini or button mushrooms, sliced
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Slice the chicken and mushrooms, and mince the garlic.
  2. Heat olive oil in a large skillet over medium-high heat. Cook seasoned chicken pieces until golden brown (about 6-7 minutes). Remove from skillet and set aside.
  3. In the same skillet, add more olive oil if needed, then sauté mushrooms and garlic until tender (about 5 minutes).
  4. Pour in chicken broth, scraping up any bits from the pan; simmer for 2-3 minutes.
  5. Reduce heat and stir in heavy cream; return cooked chicken to the skillet until heated through.
  6. Garnish with chopped parsley before serving.
