- 3–4 boneless, skinless chicken breasts
- 8 oz fresh cremini or button mushrooms, sliced
- 1 cup heavy cream
- 4 cloves garlic, minced
- 1 cup low-sodium chicken broth
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Slice the chicken and mushrooms, and mince the garlic.
- Heat olive oil in a large skillet over medium-high heat. Cook seasoned chicken pieces until golden brown (about 6-7 minutes). Remove from skillet and set aside.
- In the same skillet, add more olive oil if needed, then sauté mushrooms and garlic until tender (about 5 minutes).
- Pour in chicken broth, scraping up any bits from the pan; simmer for 2-3 minutes.
- Reduce heat and stir in heavy cream; return cooked chicken to the skillet until heated through.
- Garnish with chopped parsley before serving.
