For the Shrimp:

- 1/2 cup cornstarch

- 1/2 teaspoon smoked paprika
- Salt and pepper to taste

For the Sauce:
- 1/2 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha (adjust to taste)
- 1 teaspoon honey
- 1 teaspoon lime juice
For Garnish:
- Green onions, chopped
- Sesame seeds (optional)
Instructions
- Marinate the Shrimp:
- In a medium bowl, combine shrimp and buttermilk. Let it marinate for 15-20 minutes while you prepare the breading.
- Prepare the Breading:
- In a shallow dish, mix cornstarch, panko breadcrumbs, flour, garlic powder, smoked paprika, salt, and pepper.
- Coat the Shrimp:
- Remove shrimp from the buttermilk, shaking off excess, and dredge each piece in the breading mixture. Press gently to ensure a good coating.
- Fry the Shrimp:
- Heat about 2 inches of vegetable oil in a deep skillet or pot over medium-high heat (350°F/175°C). Fry shrimp in batches for 2-3 minutes per side, or until golden and crispy. Remove and drain on a paper towel-lined plate.
- Make the Sauce:
- In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and lime juice until smooth.
- Toss and Serve:
- In a large bowl, gently toss the fried shrimp with the sauce until evenly coated. Transfer to a serving plate, garnish with green onions and sesame seeds, and serve immediately.

- For a healthier option, bake or air fry the shrimp at 400°F (200°C) for 8-10 minutes, flipping halfway through.
