  • 1/2 cup buttermilk
  • 1/2 cup cornstarch
  • 1/2 cup panko breadcrumbs
  • 1/4 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • Vegetable oil (for frying)

For the Sauce:

  • 1/2 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha (adjust to taste)
  • 1 teaspoon honey
  • 1 teaspoon lime juice

For Garnish:

  • Green onions, chopped
  • Sesame seeds (optional)

Instructions

  1. Marinate the Shrimp:
    • In a medium bowl, combine shrimp and buttermilk. Let it marinate for 15-20 minutes while you prepare the breading.
  2. Prepare the Breading:
    • In a shallow dish, mix cornstarch, panko breadcrumbs, flour, garlic powder, smoked paprika, salt, and pepper.
  3. Coat the Shrimp:
    • Remove shrimp from the buttermilk, shaking off excess, and dredge each piece in the breading mixture. Press gently to ensure a good coating.
  4. Fry the Shrimp:
    • Heat about 2 inches of vegetable oil in a deep skillet or pot over medium-high heat (350°F/175°C). Fry shrimp in batches for 2-3 minutes per side, or until golden and crispy. Remove and drain on a paper towel-lined plate.
  5. Make the Sauce:
    • In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and lime juice until smooth.
  6. Toss and Serve:
    • In a large bowl, gently toss the fried shrimp with the sauce until evenly coated. Transfer to a serving plate, garnish with green onions and sesame seeds, and serve immediately.

  • For a healthier option, bake or air fry the shrimp at 400°F (200°C) for 8-10 minutes, flipping halfway through.
