Ingredients
Scale
- 2 tablespoons almond flour
- 1 tablespoon unsweetened cocoa powder
- 1 tablespoon granulated erythritol or another keto-friendly sweetener
- 1/4 teaspoon baking powder
- Pinch of salt
- 1 tablespoon unsalted butter, melted
- 1 tablespoon heavy cream
- 1 large egg
- 1/2 teaspoon vanilla extract
Instructions
- Prepare the Mug:
- Choose a microwave-safe mug (roughly 8–10 oz capacity) and lightly grease the inside with butter or cooking spray.
- Mix the Dry Ingredients:
- In the mug, combine the almond flour, cocoa powder, erythritol, baking powder, and a pinch of salt. Stir well to combine.
- Add the Wet Ingredients:
- Add the melted butter, heavy cream, egg, and vanilla extract to the mug. Whisk until smooth and well incorporated.
- Microwave the Cake:
- Microwave on high for 60–90 seconds, checking at the 60-second mark. The cake should rise and be set in the center. Be careful not to overcook, as microwave times vary.
- Cool and Serve:
- Let the mug cake cool for a few minutes before serving. You can top it with whipped cream or berries for extra flavor, if desired.
Notes
- You can substitute the heavy cream with unsweetened almond milk if you prefer a dairy-free version.
- Feel free to adjust the sweetener to taste, as some keto sweeteners can vary in sweetness.
- The texture is best when consumed immediately after cooking, but you can store it in the fridge for up to 2 days and reheat in the microwave.
