- 4 boneless, skinless chicken breasts (1.5 lbs)
- 12 oz fettuccine pasta
- 1 cup heavy cream
- 4 cloves fresh garlic, minced
- 1 cup freshly grated Parmesan cheese
- 2 cups low-sodium chicken broth
- 2 tbsp olive oil
- Salt and pepper to taste
- Chopped parsley for garnish (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add diced chicken breasts, seasoning with salt and pepper. Sauté until golden brown.
- Add minced garlic and sauté until fragrant. Pour in chicken broth and scrape the bottom of the pot to deglaze.
- Stir in heavy cream and Parmesan cheese until melted and creamy.
- Add fettuccine, ensuring it's submerged in the sauce. Cover and simmer for 10-12 minutes until pasta is al dente.
- Taste and adjust seasonings as needed. Fold in parsley if desired.
- Serve hot, garnished with additional Parmesan if preferred.
