  • 1 lb (450g) boneless, skinless chicken breast, cut into bite-sized pieces
  • 3 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 cups chicken broth
  • 1 (24 oz) jar marinara sauce
  • 2 cups uncooked penne or rotini pasta
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil leaves, chopped (optional, for garnish)

Instructions

  • Cook the Chicken:
    • Heat olive oil in a large pot or deep skillet over medium heat. Add the chicken pieces, seasoning with Italian seasoning, salt, and pepper. Cook for 4-5 minutes until the chicken is golden and cooked through. Remove the chicken from the pot and set aside.
  • Sauté Garlic:
    • In the same pot, add minced garlic and red pepper flakes (if using). Sauté for 30 seconds until fragrant.
  • Add Liquids and Pasta:
    • Pour in the chicken broth and marinara sauce, stirring to combine. Bring the mixture to a boil. Add the uncooked pasta and stir to coat. Reduce heat to medium-low, cover, and simmer for 12-15 minutes, stirring occasionally, until the pasta is cooked al dente.
  • Combine and Add Cheese:
    • Return the cooked chicken to the pot and stir to combine. Sprinkle the shredded mozzarella and Parmesan cheese over the top. Cover the pot and let it sit for 2-3 minutes until the cheese is melted.
  • Serve:
    • Garnish with fresh basil and additional Parmesan cheese, if desired. Serve hot and enjoy!
