- 1/4 teaspoon black pepper
- 3 cups chicken broth
- 1 (24 oz) jar marinara sauce
- 2 cups uncooked penne or rotini pasta
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Fresh basil leaves, chopped (optional, for garnish)
Instructions
- Cook the Chicken:
- Heat olive oil in a large pot or deep skillet over medium heat. Add the chicken pieces, seasoning with Italian seasoning, salt, and pepper. Cook for 4-5 minutes until the chicken is golden and cooked through. Remove the chicken from the pot and set aside.
- Sauté Garlic:
- In the same pot, add minced garlic and red pepper flakes (if using). Sauté for 30 seconds until fragrant.
- Add Liquids and Pasta:
- Pour in the chicken broth and marinara sauce, stirring to combine. Bring the mixture to a boil. Add the uncooked pasta and stir to coat. Reduce heat to medium-low, cover, and simmer for 12-15 minutes, stirring occasionally, until the pasta is cooked al dente.
- Combine and Add Cheese:
- Return the cooked chicken to the pot and stir to combine. Sprinkle the shredded mozzarella and Parmesan cheese over the top. Cover the pot and let it sit for 2-3 minutes until the cheese is melted.
