  • 2 tbsp extra virgin olive oil
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 1 lemon, halved
  • 4 cloves garlic, minced
  • 1 tsp salt (adjust to taste)
  • 1 tsp black pepper (adjust to taste)
  • 1 tsp paprika
  • 1 tsp onion powder
  • 2 cups assorted vegetables (carrots, potatoes, onions) – optional

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the chicken under cold water and pat dry.
  3. Rub olive oil all over the chicken; season generously with salt, pepper, paprika, and onion powder.
  4. Stuff the cavity with lemon halves and minced garlic.
  5. Arrange optional vegetables in the roasting pan around the chicken; drizzle with olive oil and sprinkle with salt.
  6. Roast for about 1 hour and 15 minutes until juices run clear at the thigh (internal temperature reaches 165°F).
