The delicate yet bold flavors of garlic, lemon, and white wine create a rich and satisfying meal that is perfect for any occasion.
Ingredients
Scale
- 8 oz spaghetti or linguine pasta
- 1 lb large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1/2 cup dry white wine (or chicken broth for non-alcoholic version)
- 1 tablespoon lemon juice
- Zest of 1 lemon
- 1/4 teaspoon red pepper flakes (optional, for spice)
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional, for topping)
Instructions
- Cook the pasta: Cook the pasta according to the package instructions until al dente. Drain, reserving 1/2 cup of pasta water, and set aside.
- Cook the shrimp: Heat olive oil in a large skillet over medium heat. Add the shrimp and cook for 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
- Make the scampi sauce: In the same skillet, melt the butter over medium heat. Add the garlic and cook for about 1 minute, until fragrant. Pour in the white wine (or chicken broth), and let it simmer for 2-3 minutes, reducing slightly. Add lemon juice, lemon zest, red pepper flakes (if using), salt, and pepper.
- Combine: Add the cooked pasta to the skillet and toss to coat in the garlic butter sauce. Add the shrimp back into the skillet and toss everything together.
- Garnish and serve: Serve immediately, garnished with fresh parsley and optional grated Parmesan cheese.
Notes
- For a richer flavor, you can substitute the white wine with seafood broth or add a splash of heavy cream.
- Adjust the amount of garlic and red pepper flakes based on your flavor preferences.
- This dish pairs wonderfully with a side of crusty bread to soak up the extra sauce.
