- 2 lbs beef chuck roast, cut into bite-sized pieces
- 8 oz fresh button or cremini mushrooms, sliced
- 1 large sweet onion, chopped
- 4 cloves garlic, minced
- 4 cups low-sodium beef broth
- 1 cup sour cream
- 2 tbsp Worcestershire sauce
- 1 tsp dried thyme
- Salt and pepper to taste
- Cooked pasta or rice for serving
Instructions
- In a skillet over medium heat, brown the beef chuck roast until seared on all sides. Remove from heat.
- Add chopped onions and minced garlic to the skillet; sauté until onions are translucent (about 3-5 minutes).
- Transfer the beef, onions, and garlic to the slow cooker. Stir in sliced mushrooms, beef broth, Worcestershire sauce, dried thyme, salt, and pepper.
- Cover and cook on low for 6-8 hours or high for 4-5 hours.
- Stir in sour cream just before serving. Serve over cooked pasta or rice.
