Ingredients

  • 2 lbs beef chuck roast, cut into bite-sized pieces
  • 8 oz fresh button or cremini mushrooms, sliced
  • 1 large sweet onion, chopped
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 1 cup sour cream
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Cooked pasta or rice for serving

Instructions

  1. In a skillet over medium heat, brown the beef chuck roast until seared on all sides. Remove from heat.
  2. Add chopped onions and minced garlic to the skillet; sauté until onions are translucent (about 3-5 minutes).
  3. Transfer the beef, onions, and garlic to the slow cooker. Stir in sliced mushrooms, beef broth, Worcestershire sauce, dried thyme, salt, and pepper.
  4. Cover and cook on low for 6-8 hours or high for 4-5 hours.
  5. Stir in sour cream just before serving. Serve over cooked pasta or rice.
