- 3–4 pounds chuck roast
- 4 large carrots, chopped
- 4 Yukon Gold or red potatoes, quartered
- 1 yellow onion, sliced
- 2 cups low-sodium beef broth
- 1 tablespoon garlic powder
- 1 teaspoon dried thyme
Instructions
- Wash and chop the vegetables into large pieces.
- Rub garlic powder, thyme, salt, and pepper over all sides of the chuck roast.
- (Optional) Sear each side of the roast in a skillet over medium-high heat for about three minutes.
- Place the seasoned roast in the slow cooker and surround it with vegetables. Pour in beef broth.
- Cover and cook on low for 8 hours or high for 4 hours until meat is fork-tender.
- Slice against the grain to serve with your favorite sides.
