  • 4 large carrots, chopped
  • 4 Yukon Gold or red potatoes, quartered
  • 1 yellow onion, sliced
  • 2 cups low-sodium beef broth
  • 1 tablespoon garlic powder
  • 1 teaspoon dried thyme

Instructions

  1. Wash and chop the vegetables into large pieces.
  2. Rub garlic powder, thyme, salt, and pepper over all sides of the chuck roast.
