  • 4 large bell peppers (any color)
  • 1 pound lean ground turkey
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes (low-sodium)
  • 1 cup cooked rice or quinoa
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste
  • Optional: shredded cheese for topping

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a baking dish.
  2. Cut the tops off the bell peppers and remove seeds; place them upright in the dish.
  3. In a skillet over medium heat, sauté onions and garlic until fragrant. Add ground turkey and cook until browned.
  4. Stir in diced tomatoes, cooked rice or quinoa, Italian seasoning, salt, and pepper; simmer for 5 minutes.
  5. Fill each pepper with the turkey mixture; top with cheese if desired.
  6. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 10 minutes.
