Ingredients
- 4 large bell peppers (any color)
- 1 pound lean ground turkey
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes (low-sodium)
- 1 cup cooked rice or quinoa
- 1 tablespoon Italian seasoning
- Salt and pepper to taste
- Optional: shredded cheese for topping
Instructions
- Preheat the oven to 375°F (190°C). Lightly grease a baking dish.
- Cut the tops off the bell peppers and remove seeds; place them upright in the dish.
- In a skillet over medium heat, sauté onions and garlic until fragrant. Add ground turkey and cook until browned.
- Stir in diced tomatoes, cooked rice or quinoa, Italian seasoning, salt, and pepper; simmer for 5 minutes.
- Fill each pepper with the turkey mixture; top with cheese if desired.
- Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 10 minutes.
