  • 8 corn or flour tortillas
  • 2 ripe avocados
  • 2 tbsp lime juice (freshly squeezed)
  • Optional: 1/2 cup sour cream or Greek yogurt

Instructions

  1. Prepare the marinade by blending chipotle peppers, garlic, cumin, and lime juice into a smooth paste.
  2. Marinate the beef chuck roast in the mixture for at least one hour (overnight preferred).
  3. In a slow cooker or Dutch oven over medium heat, sear the marinated beef until browned on all sides.
  4. Add chopped onions and sauté until translucent (about 5 minutes).
  5. Pour in enough water or broth to cover half of the beef. Cover tightly and cook on low for 4-6 hours until fork-tender.
