  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or agave syrup

  • Salt and pepper, to taste

Instructions

  1. Prepare the Shrimp and Vegetables:
    • In a large bowl, combine the cooked shrimp with the halved cherry tomatoes, diced cucumber, chopped red onion, and diced avocado (if using). Toss gently to combine.
  2. Make the Dressing:
    • In a small bowl or jar, whisk together the olive oil, lemon juice, Dijon mustard, honey, and fresh herbs. Season with salt and pepper to taste.
  3. Combine the Salad and Dressing:
    • Pour the dressing over the shrimp and vegetable mixture. Toss everything together to coat evenly with the dressing.
