- 1 large ripe mango, peeled, pitted, and diced
- 1/2 red bell pepper, diced
- 1/4 red onion, finely chopped
- 1 small jalapeño, deseeded and finely chopped (optional for spice)
- 1/4 cup fresh cilantro, chopped
- 1 tablespoon lime juice
- Salt, to taste

- Marinate the shrimp:
- In a bowl, combine the olive oil, lime juice, minced garlic, cumin, paprika, salt, and pepper. Add the shrimp to the bowl and toss to coat. Cover and refrigerate for at least 15-30 minutes to marinate.
- Prepare the mango salsa:
- While the shrimp is marinating, prepare the mango salsa. In a separate bowl, combine the diced mango, red bell pepper, red onion, jalapeño (if using), cilantro, lime juice, and salt. Stir gently to combine. Taste and adjust seasoning if necessary.
- Grill the shrimp:
- Preheat the grill to medium-high heat. Thread the marinated shrimp onto skewers (if using wooden skewers, soak them in water for 10 minutes before use).
