- Parmesan cheese, grated (for serving)
Instructions

- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add the Italian sausage, breaking it into crumbles, and cook until browned. Remove excess grease if necessary.
- Sauté the Vegetables:
- Add the onion, garlic, carrots, and celery to the pot. Cook for 5-7 minutes, stirring occasionally, until the vegetables are softened.

- Stir in the diced tomatoes, tomato paste, chicken broth, basil, oregano, and red pepper flakes (if using).

- Stir in the spinach or kale and cook for another 2-3 minutes, until wilted.
- Season and Serve:
- Taste the soup and adjust seasoning with salt and pepper as needed.
- Ladle into bowls and garnish with grated Parmesan cheese. Serve hot with crusty bread or a side salad.
Notes
- Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop, adding a splash of broth if needed.
- Freezing Tip: For best results, freeze the soup without the pasta. Add freshly cooked pasta when reheating.
- Customizations: Add zucchini, bell peppers, or mushrooms for extra vegetables. For a creamier soup, stir in a splash of heavy cream before serving.
- Pasta Substitutes: Try whole wheat or gluten-free pasta to suit dietary preferences.
