Ingredients

Scale
  • 1 lb Italian sausage (mild or spicy)
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (6 oz) tomato paste
  • 6 cups chicken or vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1 cup small pasta (e.g., ditalini, elbow, or small shells)
  • 2 cups fresh spinach or kale, chopped
  • Salt and pepper, to taste
  • Parmesan cheese, grated (for serving)

Instructions

  • Cook the Sausage:
    • Heat olive oil in a large pot or Dutch oven over medium heat.
    • Add the Italian sausage, breaking it into crumbles, and cook until browned. Remove excess grease if necessary.
  • Sauté the Vegetables:
    • Add the onion, garlic, carrots, and celery to the pot. Cook for 5-7 minutes, stirring occasionally, until the vegetables are softened.
  • Build the Broth:
    • Stir in the diced tomatoes, tomato paste, chicken broth, basil, oregano, and red pepper flakes (if using).
    • Bring the mixture to a boil, then reduce the heat to a simmer.
  • Cook the Pasta and Greens:
    • Add the pasta to the soup and cook for 8-10 minutes, or until al dente.
    • Stir in the spinach or kale and cook for another 2-3 minutes, until wilted.
  • Season and Serve:
    • Taste the soup and adjust seasoning with salt and pepper as needed.
    • Ladle into bowls and garnish with grated Parmesan cheese. Serve hot with crusty bread or a side salad.

Notes

  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop, adding a splash of broth if needed.
  • Freezing Tip: For best results, freeze the soup without the pasta. Add freshly cooked pasta when reheating.
  • Customizations: Add zucchini, bell peppers, or mushrooms for extra vegetables. For a creamier soup, stir in a splash of heavy cream before serving.
  • Pasta Substitutes: Try whole wheat or gluten-free pasta to suit dietary preferences.
