Description

Ingredients

  • 2 lbs lamb shoulder (bone-in)
  • 4 medium carrots
  • 4 medium Yukon Gold potatoes
  • 1 large yellow onion
  • 4 garlic cloves
  • 4 cups low-sodium beef broth
  • 1 cup red wine
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Chop all vegetables into uniform pieces for even cooking.
  2. In a large pot, heat olive oil over medium-high heat. Sear lamb pieces until browned on all sides (about 5-7 minutes). Remove and set aside.
  3. In the same pot, sauté onions and garlic until fragrant (around 3 minutes). Add carrots and potatoes, cooking until slightly softened.
  4. Pour in beef broth and red wine while scraping the bottom of the pot for flavor. Stir in thyme and rosemary.
  5. Return seared lamb to the pot, bring to a gentle boil, then reduce heat to low. Cover and simmer for about 1.5 hours until tender.
  6. Taste and adjust seasoning as needed before serving.
