For the Chicken:

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil

For the Honey Mustard Sauce:

  • 1/4 cup Dijon mustard
  • 1/4 cup honey
  • 2 tablespoons whole-grain mustard
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon garlic, minced

Instructions

  • Prepare the Chicken:
    • Season both sides of the chicken breasts with salt and pepper.
  • Sear the Chicken:
    • Heat olive oil in a large skillet over medium heat. Cook the chicken breasts for 5–7 minutes per side until golden brown and cooked through (internal temperature should reach 165°F or 74°C). Remove the chicken from the skillet and set aside.
  • Make the Honey Mustard Sauce:
    • In the same skillet, add minced garlic and cook for 1 minute until fragrant.
    • In a small bowl, whisk together Dijon mustard, honey, whole-grain mustard, apple cider vinegar, and olive oil. Pour the sauce into the skillet and stir to combine, cooking for another 2–3 minutes until slightly thickened.
  • Combine Chicken and Sauce:
    • Return the cooked chicken breasts to the skillet, spooning the honey mustard sauce over the top. Let the chicken simmer in the sauce for 2–3 minutes, ensuring the chicken is coated and heated through.
  • Serve:
    • Serve the honey mustard chicken with the sauce poured over the top. Garnish with fresh herbs like parsley, and serve with your favorite sides like roasted vegetables, rice, or mashed potatoes.

  • Optional Additions: Add a bit of cream or Greek yogurt to the sauce for a creamier texture.
  • Grill Option: For a grilled version, brush the chicken with the honey mustard sauce before grilling and use the remainder for serving.
