  • 2 large eggs (lightly beaten)
  • 1 cup panko breadcrumbs
  • 8 oz fresh mushrooms (sliced)
  • 1 cup heavy cream
  • 1 medium onion (finely chopped)
  • 3 cloves garlic (minced)
  • 2 tbsp butter
  • 2 tbsp olive oil
  • Fresh parsley (for garnish)

Instructions

  1. Set up a breading station: Place flour in one bowl, beaten eggs in another, and breadcrumbs in a third. Season each with salt and pepper.
  2. Dredge each pork chop in flour, dip in eggs, then coat with breadcrumbs until fully covered.
  3. Heat equal parts butter and olive oil in a large skillet over medium heat. Fry the breaded schnitzels until golden brown, about 4-5 minutes per side.
  4. In the same skillet, add more butter if needed, sauté onions for about 3 minutes until translucent, then add mushrooms and cook until tender.
  5. Pour in heavy cream, scrape any browned bits from the pan, and let simmer for about 5 minutes. Season to taste.
  6. Return schnitzels to the skillet, spoon sauce over them, and warm together for a minute before serving. Garnish with parsley.
