- ¾ cup vegetable oil
- 1 cup shredded carrots (freshly grated)
- ½ cup chopped nuts (optional; walnuts or pecans)
- ½ cup raisins (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper.
- In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, cinnamon, nutmeg, and salt until combined.
- In another bowl, beat the eggs lightly and mix in the vegetable oil. Add this mixture to the dry ingredients along with shredded carrots and nuts if using. Stir gently until just combined.
- Pour the batter into the prepared pan and spread it evenly.
- Bake for 25–30 minutes or until a toothpick inserted comes out clean. Let cool in the pan for at least 10 minutes before transferring to a wire rack.
