- 1 lb ground beef or lamb
- 1/4 cup fresh parsley, chopped
- 3 garlic cloves, minced
- 1 small onion, finely chopped
- 1/2 cup breadcrumbs (plain or seasoned)
- 4 pita breads
- 1 cup Greek yogurt
- 1/2 cucumber, grated
- 1 tbsp lemon juice
- 1 tbsp dill or mint, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine ground beef or lamb with parsley, garlic, onion, breadcrumbs, salt, and pepper. Mix until just combined.
- Shape into 1-inch meatballs and place on a parchment-lined baking sheet.
- Bake for about 20 minutes or until golden brown and internal temperature reaches 160°F (70°C).
- While baking, mix Greek yogurt with grated cucumber, lemon juice, and dill/mint in a bowl. Season with salt and pepper.
- Warm pita bread slightly in the oven. Stuff each pita with meatballs, drizzle tzatziki sauce over them, and add fresh veggies.
