  • 1 lb ground beef or lamb
  • 1/4 cup fresh parsley, chopped
  • 3 garlic cloves, minced
  • 1 small onion, finely chopped
  • 1/2 cup breadcrumbs (plain or seasoned)
  • 4 pita breads
  • 1 cup Greek yogurt
  • 1/2 cucumber, grated
  • 1 tbsp lemon juice
  • 1 tbsp dill or mint, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine ground beef or lamb with parsley, garlic, onion, breadcrumbs, salt, and pepper. Mix until just combined.
  3. Shape into 1-inch meatballs and place on a parchment-lined baking sheet.
  4. Bake for about 20 minutes or until golden brown and internal temperature reaches 160°F (70°C).
  5. While baking, mix Greek yogurt with grated cucumber, lemon juice, and dill/mint in a bowl. Season with salt and pepper.
  6. Warm pita bread slightly in the oven. Stuff each pita with meatballs, drizzle tzatziki sauce over them, and add fresh veggies.
