Instructions

  2. In a large bowl, whisk together the flour, sugars, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk the eggs and vegetable oil until smooth. Combine this with the dry ingredients and stir gently until just mixed; do not overmix.
  4. Fold in the grated carrots along with any optional nuts or raisins.
  5. Fill each muffin tin about two-thirds full with batter and bake for 20-25 minutes until golden brown and a toothpick comes out clean.
  6. Allow cooling in the tin for about five minutes before transferring to a wire rack.
