  • 4 cloves fresh garlic, minced
  • 1 cup jasmine rice
  • 1 cup fresh cilantro, chopped

  • 2 green chili peppers, chopped (adjust to taste)
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • For the Green Sauce: ½ cup sour cream or Greek yogurt
  • ½ cup low-sodium chicken broth
  • 1 tsp cumin powder

Instructions

  1. In a bowl, mix olive oil, garlic, lime juice, cilantro, salt, and pepper. Add chicken breasts and marinate for at least 30 minutes.
  2. Rinse jasmine rice under cold water until clear. In a saucepan, combine rinsed rice with 1.5 cups water and a pinch of salt. Bring to boil, then cover and simmer on low for 18-20 minutes until fluffy.
  3. Heat olive oil in a skillet over medium-high heat. Sear marinated chicken for about 6-8 minutes per side until golden brown.
  4. Blend cilantro, chili peppers, sour cream (or Greek yogurt), cumin powder, lime juice, and chicken broth until smooth.
  5. Fluff the rice and serve topped with sliced chicken breast and green sauce. Add lime wedges for extra zest.
