- 1 avocado, sliced
- Wonton wrappers or mini tortillas (for cups)

- Nori sheets, cut into strips (for garnish)
Instructions
- Rinse sushi rice under cold water until clear. Combine with water in a pot and bring to a boil. Cover and simmer on low for 20 minutes.
- Let rice sit covered for an additional 10 minutes. Mix rice vinegar, sugar, and salt until dissolved; fold into the cooked rice.
- In a bowl, mix diced salmon with Sriracha sauce, green onions, and lime juice.
- Preheat oven to 375°F (190°C). Line muffin tins with wonton wrappers or tortilla rounds and bake for 8-10 minutes until golden brown.
- Assemble by filling each cup with sushi rice, topping with the salmon mixture, avocado slices, sesame seeds, and nori strips.
