  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 8 oz sushi-grade salmon, diced
  • 2 tbsp Sriracha sauce
  • Juice of 1 lime
  • 1 avocado, sliced
  • Wonton wrappers or mini tortillas (for cups)
  • Green onions, finely sliced (for garnish)
  • Toasted sesame seeds (for garnish)
  • Nori sheets, cut into strips (for garnish)

Instructions

  1. Rinse sushi rice under cold water until clear. Combine with water in a pot and bring to a boil. Cover and simmer on low for 20 minutes.
  2. Let rice sit covered for an additional 10 minutes. Mix rice vinegar, sugar, and salt until dissolved; fold into the cooked rice.
  3. In a bowl, mix diced salmon with Sriracha sauce, green onions, and lime juice.
  4. Preheat oven to 375°F (190°C). Line muffin tins with wonton wrappers or tortilla rounds and bake for 8-10 minutes until golden brown.
  5. Assemble by filling each cup with sushi rice, topping with the salmon mixture, avocado slices, sesame seeds, and nori strips.
