  • 2 large eggs (optional, whisked)
  • 3 tbsp fish sauce
  • 2 tbsp tamarind paste
  • 1 tbsp Sriracha sauce
  • 1 tbsp brown sugar

Instructions

  1. Spiralize the zucchinis into noodles and set them aside.
  2. In a bowl, whisk together fish sauce, tamarind paste, Sriracha, and brown sugar until smooth.
  3. In a large skillet over medium heat, cook any protein of choice until golden brown.
  4. Add carrots and bell peppers; stir-fry for about three minutes until tender-crisp.
  5. Incorporate zucchini noodles and sauce into the skillet; toss gently for two minutes until heated through.
  6. If using eggs, push ingredients to one side of the skillet and scramble in the empty space until cooked; mix everything together.
