Ingredients

  • 12 lasagna noodles
  • 15 oz ricotta cheese
  • 2 cups fresh spinach (chopped)
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Cook lasagna noodles according to package instructions until al dente; drain.
  2. In a bowl, mix ricotta cheese, chopped spinach, half of the mozzarella, Parmesan cheese, salt, and pepper until well combined.
  3. Spread marinara sauce on the bottom of a baking dish. Take one noodle at a time, fill it with about two tablespoons of the mixture, roll it up seam-side down, and place in the dish.
  4. Pour remaining marinara sauce over the roll-ups and sprinkle with leftover mozzarella.
  5. Cover with foil and bake for 25 minutes; remove foil and bake an additional 15 minutes until bubbly.
  6. Allow to cool slightly before serving.
