Ingredients
Scale
- 2 pounds baby potatoes (or any potatoes, cut into 1-inch cubes)
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- 1/2 teaspoon dried thyme (or rosemary)
- Salt and freshly ground black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the Oven:
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
- Prepare the Potatoes:
- Wash and cut the potatoes into 1-inch cubes (or leave them whole if using baby potatoes). Pat them dry with a paper towel to remove excess moisture.
- Season the Potatoes:
- In a large bowl, toss the potatoes with olive oil, garlic powder, onion powder, paprika, dried thyme, salt, and pepper. Make sure the potatoes are evenly coated with the seasoning.
- Roast the Potatoes:
- Spread the seasoned potatoes in a single layer on the prepared baking sheet. Roast in the preheated oven for 25-35 minutes, flipping halfway through, until the potatoes are golden and crispy on the outside and tender on the inside.
- Serve:
- Garnish the roasted potatoes with freshly chopped parsley and serve warm.
Notes
- For Extra Crispiness: If you prefer extra crispy potatoes, try cutting them into smaller pieces or increasing the roasting time by 5-10 minutes.
- Variations: Experiment with different seasonings like rosemary, oregano, or Italian seasoning for a different flavor profile.
- Storing Leftovers: Leftover roasted potatoes can be stored in an airtight container in the fridge for up to 3 days. Reheat in the oven for best results.
