Instructions

  1. Cook the Sausage:
    • In a large pot or Dutch oven, heat olive oil over medium heat. Add the Italian sausage, breaking it up with a spoon, and cook until browned and fully cooked, about 6-8 minutes. Remove any excess grease, if necessary.
  2. Sauté the Vegetables:
    • Add the chopped onion, garlic, carrots, celery, and potatoes to the pot with the sausage. Sauté for 4-5 minutes, stirring occasionally, until the vegetables begin to soften.
  3. Add the Broth and Tomatoes:
    • Pour in the chicken or vegetable broth and the diced tomatoes (with their juice). Stir to combine. Add the Italian seasoning, salt, and pepper, and bring the soup to a simmer.
  4. Simmer the Soup:
