Instructions
- Preheat your oven to 425°F (220°C).
- Wash and peel the Idaho potatoes if desired; cut into uniform 1-inch chunks.
- In a large mixing bowl, combine potato chunks with minced garlic.
- Drizzle olive oil over the potatoes; add salt and pepper. Toss until well-coated.
- Spread the seasoned potatoes on a baking sheet lined with parchment paper.
- Roast for 30-35 minutes until golden brown and crispy, tossing halfway through.
