Ingredients

Scale

For the Shrimp Fajitas:

  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 2 garlic cloves, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon oregano
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • Salt and pepper, to taste
  • 1 tablespoon fresh lime juice
  • 8 small flour tortillas (or corn tortillas for gluten-free)

For the Toppings (optional):

  • Sour cream or Greek yogurt
  • Guacamole or sliced avocado
  • Fresh cilantro, chopped
  • Shredded cheese
  • Salsa or pico de gallo
  • Lime wedges

Instructions

  • Prepare the Shrimp:
    • In a medium bowl, toss the shrimp with olive oil, chili powder, cumin, smoked paprika, oregano, cayenne (if using), garlic, lime juice, salt, and pepper. Let the shrimp marinate for 10-15 minutes.
  • Sauté the Vegetables:
    • Heat a large skillet or cast-iron pan over medium-high heat. Add a drizzle of olive oil, then toss in the sliced bell peppers and onion. Sauté for about 4-5 minutes until the vegetables are tender and slightly charred. Remove the vegetables from the skillet and set aside.
  • Cook the Shrimp:
    • In the same skillet, add the shrimp and cook for 2-3 minutes per side, or until the shrimp are pink and opaque.
  • Assemble the Fajitas:
    • Warm the tortillas in a dry skillet or microwave for a few seconds. To serve, place a few shrimp, sautéed vegetables, and your desired toppings in the center of each tortilla.
  • Serve:
    • Garnish with cilantro, extra lime wedges, and a dollop of sour cream or guacamole. Serve immediately.
